Lapis Surabaya


Noni's kitchen has a new product in her classics, it is the Lapis Surabaya (Surabaya Layers)
There will three layers of goodness, with a chocolate flavour in the middle.


The recipe for our Lapis Surabaya has been in our family for over than 40 years. We have not change the recipe and did not add any preservatives to our baked goods.

This cake is moist and light.



We do't cut the edges of our cakes, because the crust are so good, and we would like to share it with you.

Each Lapis Surabaya is 24 x 24 cm.
We stack the layers with strawberry jam, just a little bit of jam, and it will not overpower the taste of the Lapis Surabaya

Classics of Noni's Kitchen


After almost a year in Perth, I finally made it back to Jakarta, and will work hard for Noni's Kitchen.

Currently I am working on Classics Collections of Noni's Kitchen.

Well, for the No. 1 Classic Collections of Noni's Kitchen, will be the Chocolate Chip Cookies. This cookies has been around for 2 years, and it is still quite popular.



Width of the Packaging are 8.5 cm and the height are 10 cm
This cookies will be in the classics of Noni's kitchen.

Very Short Trip to Jakarta

Couple of weeks ago, I went back to Jakarta for a short holiday, and I had some orders to do.

I baked about.. 20 kg of cookies, and they were almost finished by the time I left to Perth.

Majority of the cookies was for my client's one month old package for her son

Visit to Melbourne

uring the mid year break, I went to Sydney and Melbourne for holiday. During my stay in Melbourne, I had the chance to bake my cookies again.

I baked the cookies with some tweaking..

For the first batch, I tried using self raising flour instead of plain flour, and I didn't use any baking powder at all.

It does tastes good... but the texture is more like a sponge cake.

Second batch, I tried baking the cookies with half plain flour and half self raising, and no baking powder... It was hard as a rock....

So! the third batch, I am just going to follow my old trusty recipes accordingly and it turned out great. It was different than the ones that I made in Jakarta, but it tastes better than the first and second batch..

I asked my two little helpers during my stay in Melbourne to help me roll the cookies and flatten them. They are wonderful.

well the post are not going to be about me baking something.. it's more about my general life in perth.. and during my short trip back to Jakarta, I had the chance to actually bake something for a friend's one month old package...

First Chocolate Chip Cookies from Aussie, Jakarta COokies vs. Aussie Cookies


After 3 months in Perth without baking or decorate any cakes from home, I finally had the chance to bake something. Since it is the first time to use the oven to bake some sweet stuff, I tried the chocolate chip cookies. It's easy and nothing bad could go wrong.. and boy... I was wrong.

I used the same recipes like the one I used to bake in Jakarta.. the end result was totally different! Even the colour of the cookie dough was different.

I admit that the ingredients in Australia is much better quality than in Jakarta, but it confuses me that the final product was different. It was different in texture, feel and taste.

The cookie dough was firmer than in Jakarta, and I blamed the cold weather in Perth. I usually use 1 teaspoon of the dough and just drop it onto the cookie pan. Since the dough was too firm, I decided to get down and dirty and roll the dough with my hand.


First batch of the cookies was very weird looking, it looks like a bowler hat. It doesn't spread out evenly and still very round looking. I will post the photos of the bowler hat shaped cookies later on, since I can't find the photos now.

So for the second batch of the cookies, I flatten each ball of cookie dough with my hand, in hope that it would spread out nice and evenly.


It's still a bit round, I don't want to make it really flat, since it will melt in the oven.

After flattening each cookie dough balls with my hand, it did spread out evenly, although it is still a little bit round at the top.

This is the end result of the cookies.



It's still a bit round and weird looking. Compared to my original Jakarta cookies are very different. The Jakarta Cookies are more "melt-in-the-mouth" and crispy texture, while Aussie Cookies are more soft and chewy.

This cookies were then tried and tested by my friends, and they still love it. Some people likes the Jakarta Cookies and some people likes the Aussie Cookies (Most of them haven't tried the Jakarta Cookies)

Maybe next time I will try to bake cookies, and change the quantities of the ingredients so they are close in terms of taste and texture.

Sorry for the lack of post this year, since I don't really bake much this year. Maybe I'll post different things, like my house, my friends house, and my life in Perth in general.

Cupcake and Cookie Workshop

After the first workshop, I did a second one. This is the Cupcake and Cookie Workshop. Eventually I learned the proper way of ganaching cupcakes and sticking a fondant to it.

First, we need to ganache the cupcake, this is a white chocolate ganache. The reason that we ganache the chocolate was to keep the moisture inside the cupcakes and to prevent the cupcakes to dry out.

This method of ganaching cupcakes with chocolate was actually a better way than buttercream. It is less messy and easier to work with, since the chocolate will set firmly.



Then, it is really up to use what we wanted to do with the cupcakes, we can pipe swirls on top of it in different colours. and if you mess it up, you don't have to worry, since the ganache is already firm, so you can wipe it and re-do it again.


or, you can stick a fondant on it. since the ganache has set already, just brush a little of sugar syrup,and the fondant will stick like stamp to an envelope.

The decoration is up to your imagination, the sky is the limit.





Next, we have to cookie workshop. I don't really have much photos in the cookies workshop. But it was pretty simple, we had to decorated the cake with royal icing, piping techniques and flooding the cookies with royal icing too. Second part of the cookies workshop was decorating the cookies with fondant. here are the photos with fondant.



This one is a mini wedding cookies. Cover the cookies with any fondant with you own choice of colour, stack them together. and put pretty roses or any other flowers on top.

I decided to try this beauty by baking devil's cake in cupcake sizes.

place some cupcake cases in the holes

Pour some cake batter inside, fill up to 3/4 of the paper cases


close the lid, and wait for 10 minutes or 12 minutes.

then open the hood! and voila! heres comes 6 cupcakes baked to perfection.


Move the cupcakes to a wire rack to cool down, and bon appetit.

Lack of Posting

Sorry for the lack of posts these past few weeks.

Since I am not studying in a different country, with a different house hence a different kitchen, I don't have any utensils, mixers, baking pans, oven and mixing bowls etc etc that I am used to. I won't be baking cakes as often as I bake in Jakarta.

However!! My lovely roommates can sense that I miss baking, but don't want to go through the hassle of buying all the utensils and baking pans, they decided to buy me this

for my birthday!
